I believe it’s going to be my weekend meal for the next couple of weeks. No, wait, maybe months.
Because we’ve just brought home for Butters a little baby corgi brother. So saying that these two little buggers will fill my hands is obviously an understatement.
With a easy spice rub – chili powder, cumin, paprika, oregano, garlic powder – the chicken is seasoned to the right, tossed onto the skillet and fully cooked before dipping into pieces of bite size.
Serve with required toppings in warm tortillas – pico de gallo (shop-bought shortcut is okay here!), diced avocado, coriander and freshly squeezed lime juice is my favourite combo right now!
